Yeah they will, Bob - I charge "off-brand" batteries for my 7D (same battery as the 5D Mk II) in the Canon charger all the time.
Tom, you've probably just got a faulty battery - it happens. But non Canon batteries in general are just fine. According to the documentation for the 5D Mark II, under specifications, it does in fact list UDMA-compatible cards. Page 234 under Specifications Reads: Recordable Media: Type I or II CF Card, UDMA-compatible. So, I'd say stick with at least a UDMA-compatible card at what ever speed you are comfortable paying for.
